What is the difference between wort and beer?
Wort is the sweet, unfermented liquid produced by mashing malted grain in hot water and then separating it from the grain. It is full of sugars but contains no alcohol. Beer is what wort becomes after yeast is pitched and fermentation occurs, converting those sugars into alcohol and carbon dioxide. In short, wort is the raw material and beer is the finished, fermented product.
How does the mashing process work?
Mashing involves mixing crushed malted grain with hot water and holding it at a controlled temperature, typically around 63 to 70 degrees Celsius. At these temperatures, natural enzymes in the malt break down the grain's starches into fermentable sugars. The result is a thick porridge-like mixture called the mash, from which the sugary wort is later separated by lautering and sparging.
What do IBU numbers actually tell you?
IBU, or International Bitterness Units, quantify the concentration of bittering compounds, mainly isomerised alpha acids from hops, dissolved in the beer. A light lager might measure around 10 to 20 IBU, while a heavily hopped IPA can exceed 60 or even 100. However, perceived bitterness also depends on malt sweetness, so two beers with the same IBU can taste quite different in balance.
Why do brewers dry-hop their beer?
Dry-hopping means adding hops during or after fermentation rather than during the boil. Because the hops are not boiled, their bittering acids are not isomerised, so dry-hopping contributes intense hop aroma and flavour, such as citrus, pine, or tropical fruit, with little added bitterness. It is especially popular in modern IPAs and pale ales where a fresh, fragrant hop character is desired.
What role does yeast play and why is pitching important?
Yeast is the living organism that drives fermentation, consuming the sugars in the wort and producing alcohol, carbon dioxide, and many flavour compounds. Pitching is the moment yeast is added to cooled wort. Pitching the right quantity of healthy yeast at the correct temperature ensures a clean, vigorous fermentation; too little yeast or stressed yeast can lead to off-flavours, stuck fermentation, or contamination.
How do brewers use gravity readings to measure alcohol?
Gravity readings measure the density of the liquid relative to water using a hydrometer or refractometer. The original gravity is taken before fermentation, when the wort is full of sugar, and the final gravity is taken afterwards, once the yeast has consumed most of that sugar. The difference between the two readings reflects how much sugar was converted, allowing brewers to calculate the approximate alcohol by volume of the finished beer.
What is the difference between lautering and sparging?
Lautering is the overall process of separating the sweet wort from the solid grain after mashing, and it includes recirculating and draining the liquid. Sparging is a specific step within lautering in which hot water is sprinkled over the grain bed to rinse out sugars that would otherwise be left behind. Together they ensure the brewer extracts the maximum amount of fermentable sugar from the grain.
Why is conditioning necessary after fermentation?
Conditioning is the maturation stage that follows primary fermentation. During this time the beer naturally carbonates, flavours mellow and integrate, and yeast reabsorbs undesirable compounds such as diacetyl, which can taste of butter, and acetaldehyde, which can taste of green apple. Conditioning can take days for some ales or weeks to months for lagers, but it is what gives a finished beer its clean, balanced, and rounded character.
What is malt and why does it matter so much?
Malt is grain, most often barley, that has been allowed to germinate and is then kiln-dried, a process called malting that develops the enzymes and sugars needed for brewing. Malt provides the fermentable sugars that yeast turns into alcohol, but it also determines much of a beer's colour, body, and flavour. Lightly kilned malts give pale, biscuity beers, while darker, roasted malts produce the colour and coffee or chocolate notes of stouts and porters.
